I’ve been going through my recipe collection the past few days, and I decided that with the holidays upon us, now would be a good time to cook up some holiday dishes, and post them for you guys. I can’t promise that they all will have pictures of each step like this first one, but all of the posts in this series are ones that I have prepared in my kitchen.
With no further ado, I give you Chocolate Brittle
INGREDIENTS:
1 cup sugar
1/2 cup corn syrup
1 cup roasted peanuts
2 tablespoons margarine
1 teaspoon vanilla
1 1/2 teaspoons baking sodaTopping:
3/4 cup semisweet chocolate chips
1/4 cup chopped peanuts
Step 1:
Combine sugar and corn syrup in 2 quart casserole. Microwave, uncovered, on high for 4 minutes.
Step 2:
Stir in peanuts. Microwave, uncovered, on high for about 6 minutes, checking at 1 minute intervals, until golden.
Step 3:
Add margarine and vanilla. Stir. Microwave, uncovered, on high for 1 minute.
Step 4:
Stir in baking soda. While still foamy, pour and spread thinly on greased baking sheet. It’s going to foam up pretty quickly after you stir in the baking soda, so be ready to complete this step as quickly as possible.
Step 5:
Sprinkle chocolate chips over top. When softened, spread over all. Sprinkle with chopped peanuts. Chill thoroughly. Break into pieces. I don’t have a picture of it broken up, as it’s still in the fridge chilling.
